Best Bison Meatballs Recipe

Prep Time: 10 Minutes

Cooking Time: 20 Minutes

Total Time from Start to Finish: 30 Minutes

Serves: 2-4 People for all the ingredients. Increase the portion of pasta for more people

 

Ingredients:

 

For the Bison Meatballs:

1 pound ground bison meat (We used Great Range 90/10)

1 Large Egg

2 Tablespoons of cold water

1 Cup of Rice Panko Bread Crumbs

2 Teaspoons of Worcestershire

2 cloves garlic, minced

 

Other Dish Ingredients:

3 Cups Rigatoni

½ Cup Parmesan Cheese

2 Tablespoons of Salt

 

Preparing Rigatoni

In a large pot, add your 2 Tablespoons of salt to water and bring to a boil. Add your 3 cups of Rigatoni, stirring frequently, and cook until pasta is al dente (cooked to firm, yet tender texture which offers a slight resistance when you bit into it).

Once complete, drain it into a colander and set aside to be used later in the dish.

 

Preparing the Bison Meatballs

In a large mixing bowl, combine the ground bison meat, breadcrumbs, garlic, egg, water and Worcestershire

Gently mix the ingredients using your hands until everything is evenly incorporated. Be careful not to overmix, as this can result in dense meatballs.

Season the mixture with salt and freshly ground black pepper to taste, keeping in mind that bison meat is naturally lean and benefits from seasoning.

 

Forming and Cooking the Meatballs

Using your hands, scoop out portions of the meat mixture and roll them into meatballs, about 1.5 to 2 inches in diameter. Once you get them into the right size and shape, place them to the side until all of the meat is rolled into meatballs

In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the meatballs and brown them on all sides, about 2-3 minutes per side until about 90% complete

Transfer the browned meatballs to a baking dish and set aside.

In a separate large skillet, add butter to medium/high heat. Once butter is melted, add your meatballs back in the hot skillet and finish in the butter. Once finished, remove your meatballs and set aside on parchment paper

*BE CAREFUL NOT TO OVERCOOK. BISON MEAT IS VERY LEAN AND YOU CAN OVERCOOK EASILY*

In the same skillet, add your pre-cooked rigatoni to soak up all of the flavor from the meatballs seasoning and butter. To serve hot, add your meatballs to the rigatoni for 15-20 seconds before plating

 

Plating

Plate the rigatoni first and add the Bison Meatballs (3-4) on top. We chose to add a Caesar salad on the side, but feel free to use whatever side you like to compliment your meal.

Sprinkle a little extra parmesan over your Bison Meatballs and rigatoni and voila!
