Crispy Skin Salmon Recipe

This recipe was made from years of experience cooking salmon without a recipe, and just simply following the proper techniques that professional chefs will teach you in culinary school. These days, too many people bake salmon and wrap it up in tinfoil. We are not saying you can’t make a delicious salmon dish like that, but you are missing out on what is probably the most delicious part about salmon – the skin! That is why we think sautéing salmon in the pan and getting the skin nice and crispy is the best way to.

This is a very simple recipe that utilizes fresh ingredients and does not take a lot of time for prep and cooking. The only aspect of this recipe we think you should follow to the “T” is the salmon part. The rest, such as what sides you choose and what herbs and vegetables go in the sauce, can be decided based on you and your family’s preferences. For example, in the sauce we used basil and green onion as the base, but you can easily use spinach, parsley, asparagus, broccoli, oregano, and so many more options. One thing we would like to point out is that we kept this recipe very healthy by using mainly water in the sauce, but if you are okay with the calories you can use more oil instead. That will help make the sauce thicker and more luxurious.

For sides, we felt the sweet and nutty flavors of the zucchini complemented the bright and herbaceous flavors of the salmon nicely, while the mushroom brought a much needed earthiness and umami aspect to the dish. Some different options for sides include potatoes (baked or mashed), rice, couscous, asparagus, broccoli, green beans, and really whatever you like. The flowers were used at the end for some plating magic, only because we had them fresh from our homegrown zucchini. Cooking Time: 25 Minutes

Total Time from Start to Finish: 35 Minutes

Serves: 2 People for all the ingredients other than the salmon. 4-6 oz potions of salmon per person.

 

Ingredients

  • Salmon (4-6oz portion per filet)
  • 1 Yellow Zucchini
  • 1 Pack of White Mushrooms (8oz)
  • Olive Oil (about 1/4 cup for sauce, 1 tbsp. for Salmon, 1 tbsp. for Zucchini, 2 tbsp. for mushrooms)
  • Smoked Paprika (1/2 tbsp.)
  • Salt (good sea salt)
  • Pepper
  • Basil (1 cup)
  • Green Onion (1 cup)
  • Ginger (1 tbsp)
  • Garlic (5-7 cloves – some for sauce, some for mushrooms)
  • White Onion (1/2 chopped)
  • Water – 1/4 cup for for the sauce
  • Italian Herb Seasoning (for mushrooms) (1/2 tbsp.)

 

Directions 

  • Prep the Zucchini – Wash the zucchini, and then cut it on a bias into discs. Score the disks with a knife, both horizontally and vertically for a crisscross pattern. This helps it cook all the way through and get a nice crust. Brush with olive oil on both sides and season with salt, pepper, and smoked paprika.
  • Prep the Mushrooms – Wash them and slice them
  • Ginger – Peel it. We like to use a knife but you can also just use the edge of a spoon.
  • Garlic – Skin them and chop it up. Leave a couple cloves whole for the sauce.
  • The Sauce – Put the green onion, basil, 3-4 cloves garlic, ginger, 1/4 cup olive oil, 1/4 water (add water and oil to thin and thicken as per your preference), 1/2 tbsp. salt, a few twists of fresh cracked black pepper, a dash of smoked paprika. Blend it together until smooth and good consistency.
  • Cook the Mushrooms – heat up 2 tbsp. of olive oil in a pan on medium-high heat. Add the mushrooms, add the onions, add the Italian herb seasoning, add salt and pepper. Let it cook. After about 10 minutes, add the chopped garlic, this way it doesn’t burn. Cook for about 15 minutes total, or until golden brown and the water is cooked out.
  • Cook the Zucchini – Add the zucchini to a pan on medium-high heat. Cook for about 5-7 minutes on each side (until brown and crispy) and then flip. Cook until the other side is browned up and then remove and cover with foil.
  • Salmon – prep it by scoring the salmon with a sharp knife on the skin side. This helps it cook all the way through and also gets the skin nice and crispy. Season the skin side with salt and pepper and massage it in. Lay the salmon into a pan where there is hot olive oil on a medium-high heat. Lay it away from you so it doesn’t splash. Once it’s in the pan you can season the top with salt and pepper. The salmon cooks the majority of the time with the skin side down. Watch for the white translucent color to take over about 1/2 to 3/4 of the way up, and then flip it. Depending on how thick your salmon filets are, you might want to tag it quickly on the sides to ensure it’s cooked through.
  • Plate Your Meal – Scoop and spread some sauce down on the side of the plate. Lay the salmon over one half of the sauce. Place the mushrooms to the side of the salmon, and then place the zucchini next to the mushrooms. Now is the time to garnish the plate with any zucchini flowers or fresh herbs you have to make it look beautiful.
