Cooking Time: 4-6 hours (depends how “falling off the bone” you want it)

Serves: 6 People

 

Ingredients

  • 1 Lab Shoulder
  • 1 tbsp. Salt
  • 1 tbsp. Pepper
  • 1 Bulb of Garlic
  •  3 tbsp. Olive Oil
  •  1 White Onion (sliced)
  • 2 Cups Red Wine
  • 2 Cups Beef Stock
  • 1 Lemon
  • 1.5 Cups Water
  • 1/2 tbsp. Paprika
  • 4-6 White Potatoes
  • 1 Pack of White Asparagus (green is fine too)
  • 6-8 Sprigs of Thyme

 

Cooking Instructions

  1. Trim any excess fat from the Lamb Shoulder. It’s okay if it has some fat areas, but big thick pieces should be trimmed
  2. Season the lamb with salt pepper and put the olive oil in a big sauce pan over medium-high heat.
  3. Sear the lamb on all sides then remove from heat.
  4. Add the sliced onions to the lamb pan with all the oil and lamb fat in there.
  5. Add the garlic bulbs (which should be cut in half) to the pan face down
  6. Add the red wine, beef stock, juice of 1 lemon and the lemon, paprika, potatoes (peeled and cleaned) and water. Let that reduce for about 15 min until thickened
  7. Put the lamb back in the pan and baste it for about a minute.
  8. Add some fresh thyme, and then cover the pan and put it into a 225 degree oven for about 6-8 hours. The timing depends on how big the lamb is and how tender you want it. You can also cook it at a higher heat for less time, but don’t go above 300 degrees.
  9. When the lamb is about 15-20 minutes out, make the asparagus. Put some butter and olive oil in a sauce pan on low to low-medium heat. Sautee the asparagus with salt, pepper, garlic, and fresh thyme until tender and cooked.
  10. When the lamb comes out, check the tenderness and then plate and enjoy!
